Low key insane gluten free flour. Makes an amazing additive in your glutinous breads, chocolate chip cookies, and tons of great gluten-free recipes like waffles or dosa. A super healthy option, you can grind your own or buy it in most baking aisles, too.

      Some people are allergic to it. Many more people has convinced themselves they are allergic to it because it has become a fashionable allergy which has then transformed into a more generalised "gluten bad, gluten-free healthy" sentiment.

      I love gluten but it doesn’t sit well with some people and can causes allergies 🤷‍♂️

    Whole buckwheat is great, too, you can use it in ways similar to millet or bulgur.

    I've tried making soba noodles from scratch with buckwheat flour, it's much harder than ramen or Italian pasta though. I'll probably give it a try again soon.
